The historical origins of couscous are subject to many interpretations: Berber or African, ancient or medieval. There are as many couscous as there are lifestyles and cultures.

Couscous is often represented in hospitality ceremonies. It travels with the migrants who introduce it where they settle. But is Maghreb cuisine simply a story of couscous or is it the story of the dishes that travel with those who have left the southern shore of the Mediterranean? This book makes an original contribution to the understanding of the diversity of Maghreb cuisines through the differences, developments and permanence perceived in terms of culinary facts in North Africa.
